Matcha is a powdered green tea, made of the grinded leaves of tencha (covered before harvest time, as gyokuro, and then dried but not rolled). This is the tea used during chanoyu ceremonies, but you can also enjoy a nice bowl of matcha on a daily basis. This high quality matcha, made from smaller leaves, is particularly suited for the preparation of koicha (dark tea), obtained by kneading the tea powder with a chasen (bamboo whisk) in a chawan bowl. An onctuous and slightly bitter taste, more powerful than usucha.
